Recipe of the Week: Italian Chicken Soup

For an easy, healthy dinner, try this Italian Chicken Soup! It is made in the crock pot, so you can throw it on in the morning for a delicious evening dinner!

Ingredients:

2 boneless skinless chicken breasts

28 OZ can of crushed tomatoes, or diced tomatoes if you prefer it chunky

15 OZ can of tomato sauce

1 cup low sodium chicken broth

1 small onion

2 cans of white beans of choice: Great Northern, Cannellini, or Navy beans are all suitable options.

1-2 cups chopped celery

1-2 cups chopped baby carrots

2 TBSP Italian seasoning

1.5 TSP basil

1.5 TSP oregano

1 TSP salt

Directions:

Place all ingredients into the crockpot and stir to combine. Cook on low for 5-6 hours, or until chicken is cooked through and tender. Remove chicken, shred, and place back in crockpot. Stir the chicken in with the rest of the soup. Top with Parmesan cheese and parsley and enjoy!
