This Cheddar Herb Chicken recipe is very quick and super easy, making it the perfect weeknight dinner. Serve with steamed broccoli and a tossed salad for a healthy, delicious meal!
Ingredients:
2 Chicken breasts, cut in half lengthwise (I have found it takes a long time to cook through if the chicken is not halved.)
salt, pepper, garlic powder, parsley, basil, and oregano, all to taste
cheddar cheese, to taste
Directions:
Cut chicken in half lengthwise, lightly salt and pepper both sides, and then generously season both sides with garlic powder, parsley, basil, and oregano.
Place chicken in a large pan and cook on medium heat until cooked through, approx 5-7 minutes on each side. To keep the chicken from burning, I add incremental amounts of water to the bottom of the pan- once the water cooks off, add a little bit more. It keeps the chicken from browning too much while the inside cooks.
Once the chicken is cooked through, sprinkle cheddar cheese over the top for additional taste, or skip the cheese for a lower calorie option.
Allow cheese to melt, then remove chicken from pan. Serve with your choice of sides and enjoy!
